Zucchini pancakes are a delicious way to use up a zucchini that may have been growing out of control in your garden. They are perfect for breakfast, lunch, or dinner and can be eaten plain or topped with your favorite syrup or dip. Zucchini Pancakes are a healthy and delicious breakfast option. They are gluten-free, vegan, and full of fiber and vitamins.

How To Make Zucchini Pancakes

Set the oven to 300 degrees Fahrenheit. Utilizing the box grater’s big grating side, shred the zucchini into a bowl. Add the onion and eggs right away. Add the baking powder, salt, and pepper along with the remaining 6 tablespoons of flour. (Add the remaining 2 tablespoons of flour if the batter becomes too thin because to the liquid in the zucchini.) Melt 1/2 tablespoon butter and 1/2 tablespoon oil in a sizable (10 to 12-inch) saute pan over medium heat.

Reduce the heat to medium-low and add heaping soup spoons of batter to the pan when the butter is hot but not smoking. The pancakes should be cooked for about 2 minutes on each side. The pancakes should be placed on a sheet pan and warmed in the oven. When all the batter has been used, wipe the pan with a dry paper towel, add additional butter and oil, and proceed to fry the pancakes. Up to 30 minutes can pass while the pancakes are still warm in the oven. Serve warm.

How To Store Zucchini

One of the most common vegetables found in home gardens and in the grocery store is zucchini. Zucchini is not only delicious in salads and stir-fries, but can be preserved for a later date by drying, pickling, or freezing.

When harvested, zucchini can be stored in a refrigerator for up to 5 days or in a cool, dark place for up to two weeks. To store zucchini, place in a plastic bag, seal tightly, and place in the crisper of your refrigerator. Other best way to store zucchini is to use an airtight container such as a mason jar.

Zucchini pancakes are an easy to make and versatile dish. The zucchini is often used as a substitute for a high carb ingredient and the pancakes can be a breakfast, lunch, or dinner dish. Zucchini pancakes are often made with other vegetables, meats, or cheeses so that they can be made sweet, savory, or spicy.
