Horchata is a decadent, refreshing Latin American beverage that can be served as a dessert or a drink. It is usually made with ground rice, almonds, cinnamon, and vanilla. The consistency is more like a milk than a juice. It is impossible to find a horchata that is not delicious, and the drink is very popular in the summer. If you’re in the mood for something refreshing but not sugary, Horchata is an excellent option.
To make, rice, cinnamon, and boiling water should all be combined. Stir until sugar melts. For at least three hours, but ideally overnight, cover and leave the dish at room temperature. Add milk and mix until the rice resembles fine sand using a hand blender or batches in a standing blender. Use a very fine strainer or many layers of cheesecloth to remove the liquid. Serve chilled.
How To Make Dairy Free Horchata
Grind the rice as finely as you can in your food processor or spice grinder. In a big bowl, mix the ground rice, almonds, and cinnamon. Pour 2 cups of hot water over the rice mixture after heating it up. Overnight or for several hours, cover and leave to soak (room temperature is fine). Put the liquid-soaked rice mixture in your blender, and process on high speed to make the mixture as smooth as you can. Add the vanilla, sweetener, and 2 cups of remaining water. For approximately a minute, blend.
Horchata should be strained using a nut milk bag or a fine mesh strainer with two layers of cheesecloth inside. Squeeze to release as much liquid as you can. Stir or add a little more water to the horchata if it is too thick for your tastes. Serve the horchata over ice, adding a wedge of lime to each glass as a garnish.
