6 eggs
6 eggs is the right amount of eggs.
2 tbsp. olive oil
Preheat oven to 450°F and line a baking sheet with parchment paper. In a large bowl, combine the tomatoes, feta cheese, olive oil, salt and pepper until well mixed together (about 2 minutes). Scoop about 1/4 cup of scrambled eggs into each of 12 ramekins or cups (you can use small ramekins instead if you don’t have any larger ones).
2 cloves garlic, finely chopped (optional)
If you’re a garlic lover, feel free to add a few cloves. I added 2 because I like garlic and thought that was plenty; if you are not a fan of it, decrease the amount to 1 or even none at all!
3 large tomatoes, thinly sliced
Tomatoes are a good source of vitamin C, antioxidants and lycopene. Tomatoes are also a good source of potassium, which helps to maintain normal blood pressure. Tomatoes also contain folate (a B vitamin) that may help reduce the risk of heart disease.
½ cup feta cheese crumbles
Feta cheese is a salty, tangy, and stinky cheese. It’s made from sheep’s milk and it has a distinctive aroma that is highly prized by chefs around the world. You can buy feta at your local grocery store or you can make it yourself! To make fresh feta:
- In a large bowl add 2 cups of warm water and stir in 1 tablespoon kosher salt until dissolved. Then add 1 tablespoon lemon juice, 1 teaspoon black pepper and 2 tablespoons olive oil; whisk together until fully combined (you may need to add more water if the mixture is too stiff). Cover with plastic wrap or put into an airtight container for up to 5 days before using in cooking recipes like these scrambled eggs with tomato ring feta scrambles.*
1 tbsp. dried oregano flakes
In a small bowl, combine the oregano and salt. Add the eggs to a large pot (like a Dutch oven) and fill with water to cover by about an inch. Bring to a boil over high heat; then reduce heat to low and simmer for 8 minutes or until cooked through but still firm in the center.
1 pinch salt and pepper
Add salt and pepper to taste. Pepper is a spice that adds flavor and pep to food.
