INGREDIENTS
- 1 pound small shrimp, peeled and deveined
- 3 cloves garlic, minced
- 2 jalapeno peppers, sliced into coins
- 2 teaspoons smoked paprika (not hot)
- 1 teaspoon kosher salt (or half of a normal teaspoon)
- 1 teaspoon ground black pepper
INSTRUCTIONS
- Heat up your oil in the Instant Pot on sauté mode.
- Add in onions and garlic and cook until they start to brown.
- Add in jalapenos and cook another minute or two.
- Stir in remaining ingredients except for shrimp until they are fully mixed together.
- Stir in shrimp so that they’re coated with sauce.
- Close the lid on your Instant Pot, lock it into place, select manual setting for high pressure at five minutes.
- Once timer goes off let pressure release naturally for about ten minutes before manually releasing any remaining steam by turning valve from sealing position to venting position with back of spoon handle so you don’t burn yourself!
1 pound uncooked large shrimp, peeled and deveined
- The first step is to put the shrimp in a large bowl, then cover with cold water and let them sit for about 5 minutes to get rid of excess sand and debris.
- After you’ve done that, drain the shrimp really well by using a colander or strainer and throwing it over your sink while running some cold water over it (this will also rinse off any residual salt). Then pat dry with paper towels so they’re nice and dry before cooking!
- Next up: using a meat thermometer (you can use an instant-read thermometer if you want), check the temperature of your broth—it should be at least 140°F/60°C when ready—and add in your spices if desired (cayenne pepper, paprika powder). Also toss in any frozen onions or garlic cloves from Step 1 here too if you didn’t already do this earlier! The goal is for everything else except for those frozen veggies themselves not only be fully submerged but also have enough liquid surrounding them so that all sides are equally cooked throughout even though there won’t actually be enough room for everything inside because it’s all piled up like Tetris blocks instead of being spread out evenly across an entire surface area like one might expect from normal cooking methods where things aren’t stacked together like Tetris blocks.
