Healthy Dinner Bowls: Chicken Veggies & Avocado Dip

What is Chicken Veggie Bowl
A Chicken Veggie Bowl is a healthy meal that is easy to make. It’s great for lunch or dinner, and it’s perfect if you’re looking for something easy but filling during the week. This meal has chicken, veggies, and Greek yogurt! Plus avocado! Yum!
Ingredients
2 cups chopped cooked chicken breast
1/2 cup chopped fresh mint
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh chives
1/4 cup chopped fresh basil
3 garlic cloves minced, divided
Instructions
In a small bowl, combine 2 garlic cloves and the yogurt. Stir in the feta, pepper, salt, oregano and basil until well blended. Set aside.
Combine beans, bell pepper, cucumber and remaining garlic in a large bowl; toss to coat with oil-vinegar mixture (if desired). Spread bean mixture evenly onto the bottom of the baking dish. Spoon chicken mixture over bean layer; gently spread into an even layer. Top with feta mixture; sprinkle evenly with crumbled feta cheese if desired.. Bake at 400°F for 25 minutes or until bubbling around edges and chicken is no longer pink in center (165°F).
For Greek Yogurt dip
- In a small bowl, combine the Greek yogurt, cilantro, red onion, salt, pepper and lemon zest. Mix well to combine all ingredients. Cover and refrigerate until ready to serve with chicken veggie bowl.
- This creamy Greek yogurt dip has a lovely taste. It has the ideal seasoning! We consume them quickly, so I make a new batch every few days. It works well with vegetables, but it also tastes fantastic with chips or crackers.
What distinguishes Greek yogurt from normal yogurt?
Greek yogurt undergoes more thorough straining, which removes more whey. Yogurt that is thicker and has more protein and less sugar is the end product.
Can Greek yogurt be used in place of sour cream?
Yes. In dressings, dips, and many other dishes, sour cream and Greek yogurt made from whole milk may almost be used interchangeably. However, the yogurt is less creamy and has more tang.
Can this dip be frozen?
I advise against freezing it. It may be kept for many days in the refrigerator. It shouldn’t, however, be frozen.
Cooking Notes
- Cook the chicken in a pan on medium-high heat for 3 to 4 minutes, or until browned and cooked through.
- In another pan, sauté the onions and garlic on medium heat until translucent, about 5 minutes.
- Add 1/2 tsp of olive oil to your rice cooker (or saucepan) with 1 cup water and salt to taste; cook according to instructions until all liquid is absorbed into the rice (usually 10-20 minutes).
- Transfer everything from Step 2 into your veggies cooker (or saucepan) and add 1/2 tsp of olive oil along with your chicken breast; stir occasionally as it cooks for about 5-10 minutes, or until heated through completely but not overcooked!
Pro Tip
- Use a non-stick pan to cook the chicken.
- Use a spatula to flip the chicken and cook for about 3-4 minutes on each side.
- Add in the cucumber and tomatoes at this point, as well as salt and pepper to taste.
- Mix together the Greek yogurt and garlic until smooth, then add it into your bowl!
