6 cups blanched almond flour
You can find almond flour in most grocery stores, but it is often sold in bulk. If you don’t have a lot of time to bake, we recommend buying pre-made almond flour and using that for this recipe. It’s not very expensive and will save you the hassle of spending hours in the kitchen!
1 cup flaxseed meal

Psyllium husk powder is high in fiber (8g per ¼ cup), which helps to keep you fuller for longer; it also contains soluble and insoluble fibers that help to regulate digestion.
2 teaspoons sea salt (10 g / 0.4 oz)
Salt is an important ingredient in bread, and it helps with rising, flavor, and browning. It can be swapped out for other salts (we recommend Himalayan Pink or coarse grey), but I prefer the taste of sea salt as it’s more mild than other varieties.
2 tablespoons instant dry yeast (14 g / 0.5 oz)
This is the amount of instant dry yeast you will need for this recipe. If you’re not sure how to measure, see the video above! You can store your almond flour in an airtight container or jar at room temperature for up to 6 months.
2 cups lukewarm water (480 ml / 16 fl oz)
This should be the temperature of a baby’s bath, not hot. Use a thermometer to check it if you’re unsure and don’t want to burn your finger.
4 large eggs, room temperature and beaten (240 ml / 8 fl oz)
Do not use cold eggs. They won’t mix into the dough properly, and it will turn out too tough. To beat the eggs, stir them with a fork until they’re frothy (or use an electric mixer).

Nigella sative seed oil or sesame oil for brushing top of the loaf (optional) – or any other oil you have on hand or prefer to use.
Nigella sativa seed oil, also known as black cumin seed oil, is a popular cooking oil in India and the Middle East. It has a very distinct taste and smell that’s quite different from other cooking oils. If you can’t find nigella seeds at your local grocery store or specialty shop (you’ll need about one cup), make your own nigella sativa seed oil by soaking the seeds in 2 cups of warm water overnight. Drain them, add another 2 cups of water and boil until the seeds are soft enough to grind into a paste. Then strain out the paste and let it cool down before making this bread!
INSTRUCTIONS
- Preheat the oven to 350 F and grease a loaf pan with olive oil.
- In a large bowl, combine almond flour, baking soda, salt and psyllium husk powder (if using).
- In another bowl, whisk together eggs and egg whites until frothy; add coconut milk and buttermilk; whisk to combine; then add melted butter or ghee (if using); whisk again until combined well.
- Add wet ingredients to dry ingredients; mix until completely incorporated—you will have some lumps here and there but don’t worry about that!
