Cut the chicken thighs in half and remove the bone. Place the chicken thighs in a resealable bag with 1/4 cup olive oil, 1/2 teaspoon salt, 1/8 teaspoon pepper, and garlic powder to taste. Marinate at room temperature for 30 minutes or refrigerate overnight; set aside if marinating overnight.
