When cooking with this spice mix, use one teaspoon per pound of meat. For example, if you are making chicken wings and want them to be spicy hot, use about two tablespoons total of Cajun seasoning per ten pounds of chicken wings!
Directions:
Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil. Cut the lobster tail fins off to prevent burning and place them on the prepared baking sheet, cut side up.
Bake for about 15 minutes until heated through and opaque throughout (but feel free to bake longer if you like your lobster tails crispier). Remove from oven and serve immediately with lemon wedges or melted butter if desired.
In a small bowl, mix together Cajun seasoning, paprika, and garlic powder. Brush the cut sides of the lobster tails with half of the melted butter, then sprinkle with half of the seasoning mixture. Place lobster tails in preheated oven, and cook 15 minutes. Remove from oven. Brush cut sides with remaining butter and sprinkle with remaining seasoning mixture. Return to oven and continue cooking 10 minutes, or until opaque throughout. Drizzle cooked lobster tails with lemon juice before serving.
You can also use vegetable broth if you prefer not to use animal products. Vegetable broths do not contribute as much flavor as chicken or beef broths do; however, they are healthier for you and contain more vitamins and minerals than other types of broths or soups.
