Cajun Chicken and Broccoli Alfredo Recipe: A Flavorful Spin on an Italian Classic

Ingredients:
- 1 pound chicken breast, cooked and shredded (I used rotisserie chicken)
- 4 cups broccoli florets
- 1 cup heavy cream, divided into 2 parts
To make the Alfredo sauce: whisk together 1/2 cup of heavy cream and 2 tablespoons of butter in a small saucepan over medium heat until melted. Whisk in 3/4 cup of Parmesan cheese until smooth. Season with salt and pepper to taste, then set aside.
To prepare the fettuccine: fill a large pot with water and bring it to a boil over high heat. While waiting for your water to boil, start cooking your pasta according to package instructions or until tender but still firm to bite into (about 4 minutes). Drain well and transfer back into its cooking pot; if you’re using dried noodles, add some olive oil so they don’t stick together while waiting for the rest of your meal!
3 tablespoons butter
To melt butter, place it in a small saucepan over medium-low heat until melted. Pour into a measuring spoon and then pour it into the pan with the chicken. If you don’t have measuring spoons, use corner of a knife or your index finger to push some of the butter out of its container and into your pan. If you’re using frozen peas, add them to the pan with the chicken and butter.
Cook for 2 minutes until warmed through. Add the garlic and cook until fragrant, about 30 seconds. Add the chicken broth, lemon juice and parsley; bring to a boil. Reduce heat to low, cover and simmer for 10 minutes or until chicken is cooked through.

Pour mixture into a greased 9×13 pan. Bake for 20-25 minutes, or until golden brown on top and bubbling underneath.
