Cajun Chicken and Broccoli Alfredo Recipe: A Flavorful Spin on an Italian Classic

The chicken and broccoli are cooked right in the alfredo sauce, making it easy-to-make one-pot meal that you can throw together in about 30 minutes.

Cajun Chicken and Broccoli Alfredo is a delicious one-pot meal that hits all the right notes. It’s spicy, creamy, cheesy and rich in flavor. The perfect blend of comfort food! This dish is super easy to make and loaded with tons of flavor. It’s also packed with protein and will keep you full for hours!

This is the perfect meal for anyone who loves a little spice with their food. The creamy alfredo sauce is infused with garlic and spicy Cajun seasoning, which gives it an amazing kick that’s hard to resist!

Ingredients:

  • 1 pound chicken breast, cooked and shredded (I used rotisserie chicken)
  • 4 cups broccoli florets
  • 1 cup heavy cream, divided into 2 parts

To make the Alfredo sauce: whisk together 1/2 cup of heavy cream and 2 tablespoons of butter in a small saucepan over medium heat until melted. Whisk in 3/4 cup of Parmesan cheese until smooth. Season with salt and pepper to taste, then set aside.

To prepare the fettuccine: fill a large pot with water and bring it to a boil over high heat. While waiting for your water to boil, start cooking your pasta according to package instructions or until tender but still firm to bite into (about 4 minutes). Drain well and transfer back into its cooking pot; if you’re using dried noodles, add some olive oil so they don’t stick together while waiting for the rest of your meal!

3 tablespoons butter

To melt butter, place it in a small saucepan over medium-low heat until melted. Pour into a measuring spoon and then pour it into the pan with the chicken. If you don’t have measuring spoons, use corner of a knife or your index finger to push some of the butter out of its container and into your pan. If you’re using frozen peas, add them to the pan with the chicken and butter.

Cook for 2 minutes until warmed through. Add the garlic and cook until fragrant, about 30 seconds. Add the chicken broth, lemon juice and parsley; bring to a boil. Reduce heat to low, cover and simmer for 10 minutes or until chicken is cooked through.

2 skinless, boneless chicken breast halves – cut into bite-size pieces

Cut the chicken into bite-size pieces. Chicken is a great source of protein and you can get a good amount from this recipe, so go ahead and use the whole thing!

1 (7 ounce) package Cajun seasoning mix

Cajun seasoning mix is a blend of spices used in Cajun cooking. It typically contains paprika, garlic powder, onion powder, black pepper, cayenne pepper and salt.

2 heads broccoli, cut into florets

  • Cut the broccoli into florets. You can use frozen broccoli, but fresh is best if you have it on hand.
  • If you’re using stems and florets, just slice them thinly.

1 (16 ounce) jar Alfredo sauce

  • Alfredo sauce is a traditional Italian sauce made with butter, cream, and Parmesan cheese. It’s best used with pasta, vegetables, and meat. Alfredo sauce is a popular sauce for chicken, seafood, and vegetables.

DIRECTIONS

Preheat oven to 350 degrees.

Combine all ingredients in a large bowl, mixing well to ensure that the flour has been evenly distributed throughout.

Pour mixture into a greased 9×13 pan. Bake for 20-25 minutes, or until golden brown on top and bubbling underneath.

Melt butter in a large skillet over medium heat. Cook chicken in the hot skillet until browned and cooked through, about 10 minutes. Stir Cajun seasonings into chicken; cook and stir until the seasonings stick to the chicken, about 5 minutes. Add broccoli to chicken; pour Alfredo sauce over contents of the skillet and stir the mixture together. Reduce heat to low and simmer until broccoli is tender, 10 to 15 minutes more.
