Satisfying Vegan Breakfast Recipes. Hearty and Delicious!

Tofu Scramble:
1 Red Pepper
1 Block Tofu
Spices: tsp each of onion powder, garlic powder, turmeric, salt.
Serve with toast (with vegan butter- I use earthbalance) and fruit!

1/4 cup ground flax + 1/2 cup water (mixed and let sit for 5 min)
2 cups flour
2 cups almond milk
2 tbp. olive oil
1/4 cup hemp seeds
-cook them on some oil or earthbalance πŸ™‚
-toppings: fruit, nuts, seeds, maple syrup, raisins, goji berries ect.

“Yogurt” Parfait
1/2 cup almond milk + 2 tbp. chia seeds
1 cup cooked oats
2 tbp maple syrup
1 teaspoon cocoa powder
add vegan yogurt and your fav fruit!

Carrot Muffins!
3 ripe bananas
Flax egg recipe above
3 tbp peanut butter
3 tbp melted coconut oil ( or olive oil)
3 grated medium sized carrots
cup almond milk
3/4 cup maple syrup
2.5 cups flour
teaspoon baking powder
tbp cinnamon
1 cup dry oats
Some walnuts and dark chocolate chips if you want!
-Bake at 350 degrees for 25min.
