Vegan 🌱🥕 Carrot Cake Bites

-1 cup oats
-1 1/2 cups pitted dates
-3 scoops livwell protein
-2 cups shredded carrots
-1/3 cup nut butter
-1/3 cup maple syrup
-1/3 cup raisins
-3 tsp vanilla
-3 tsp cinnamon
*shred your carrots first, than add all ingredients except raisins into your food processor. Once combined, remove dough and put into a large bowl. Stir in raisins. Roll out into 18-20 bite size balls. Store in the refrigerator for up to 7 days or freeze for up to 30 days

-20 oz blueberries
-1 lemon
-2 cups oats
-1/3 cup sugar free maple syrup
-2 tsp baking powder
-2 tbl corn starch
*Mix oats, baking powder and maple syrup in a bowl, set aside. Combine other ingredients in a pot and bring to a simmer on the stovetop. Add corn starch and stir until the blueberries thicken.
In a baking dish sprayed with non stick spray, pour in the blueberries than cover with oats. Bake at 350 degrees for 25-28 minutes.
