10 Minute Vegan / Paleo Scallop Recipe!

My husband and I are on a 2 month road trip across the US. We follow a strict paleo / vegan diet to help maintain Brenna’s Ulcerative Colitis symptoms. We have followed the paleo diet for almost 4 years and the vegan diet for a year. Brenna has been medication free for 4 years because of our diet and lifestyle change. We have created and tried many recipes during our health journey and can not wait to share our favorites with you!

What you will need for this dish:

Two Servings –

– 3-4 Large Trumpet (King Oyster) Mushrooms
– 1 Tablespoon of Organic Olive Oil
– 2 Teaspoons of Organic Lemon Juice
– 2 Teaspoons of Vegan / Paleo “Butter” (Our fave right now is Califia Farms Plant Butter but we used Plant Philosophy Le Grand Vegan Butter (creme dela creme) in this video)
– Seasonings (We used sea salt, pepper, onion powder, garlic powder, and paprika)

Directions:

– Rinse and dry your mushrooms.
– Cut the top of your mushrooms off. (You will not need the tops for this recipe but we recommend saving them for a yummy stir fry or sauteed mushrooms).
– Slice the mushroom stems into quarter inch think circles. These will be your scallops.
– Slice a tic-tac-toe like symbol on the front and back of each scallop. This will give you more of a scallop texture.
– Heat up a pan to medium heat.
– Add 1 tablespoon of olive oil and 1 teaspoon of vegan / paleo butter to the pan.
– Once the butter and oil are simmering, add your scallops to the pan.
– Let cut for about 2 minutes.
– Add your seasonings.
– Let cook for another 2 minutes or until golden brown.
– Flip each scallop to cook on the other side.
– (Optional) Add 1 more teaspoon of vegan / paleo butter to the pan.
– Cook on that side for 4 minutes or until golden brown.
– Before removing the scallops to the pan, add in your lemon juice. The acid from the lemon will cause the pan to sear the scallops in the lemon. Let cook for another 30 seconds and remove from heat.
– Let cool and enjoy immediately!
