These scallop potatoes are super simple to make and they are absolutely as tasty as they get. I never really follow a recipe when I make these, its just a matter of sautéing some onions and garlic and then tossing in a bunch of sliced potatoes, enough to fill up your favourite casserole dish. I used a little too much liquid in this video so if you make these, just don’t fill it up as much as I did, although the potatoes do absorb a decent amount of the liquid.
I used Tex-Mex spice mic to flavour the potatoes but they are so versatile you can literally use any spices you like. Just make sure that you are generous with the amount you use, you want your potatoes flavoured!
-enough potatoes to fill your casserole dish
-1 rib of celery
-3 cloves of garlic
-pinch of salt and pepper
-1/4c or so of Tex-Mex
-1 tbsp nutritional yeast
-1 tbsp Brags Soy Seasoning (soy sauce)
-2c vegetable broth
-1/2c soy cream
Oven set to 425F Bake for 35-45min
