Easy Plant-Based DIY Vegan – Bulgar Wheat – Salad Recipe

-Grain –
1 cup uncooked bulgur wheat – you can try this with other grains like brown rice!
-Citrus —
1 lemon or lime l – add the zest for more lemony or lime flavor
-Herbs –
1 cup chopped parsley
10 to 15 Mint Leaves
and/or 1/8 cup dill
I recommend pulsing in a food processor as shown
-Root Veg —
1 bunch green onions or 1 small white onion chopped, or to taste
1 clove or garlic or to taste
-Fruit – Yes Tomatoes are a fruit! —
1 large tomato, 2 medium tomato, or 1 cup grape tomatoes, halved
-Protein (optional) —
1 cup frozen shelled edamame thawed or other beans such as our Roasted Chicpeas, or Lentils! Check the Playlists!
–And recommended for sure….
2 tablespoons olive oil
Salt and pepper to taste

Cook bulgur wheat according to package instructions – Cool
Once chilled, add the other ingredients. Enjoy!

Cooks Notes: The Umami really comes through with the Edamame! Other ideas for additions – avocado, olives…. Or make a sandwich in a wheat roll up with hummus or roasted chicpeas we made in another video!!
