Black Bean and Quinoa Salad | Vegan Recipes | The Frugal Chef



Am I a salad or am I a bowl? I guess I can be both! This easy and super healthy recipe for quinoa with vegetables is loaded in nutrients and is clean as can be. We are going to cook quinoa with onions, peppers, garlic, cumin, oregano, corn and black beans. Once it is cooked we will top it with a delicious tomato, cilantro, lime salsa and some avocado slices. Delish!

How to cook quinoa with vegetables –

FOR THE QUINOA:
1 cup uncooked quinoa — well washed
1/2 small onion — minced
1/2 teaspoon ground cumin
2 garlic cloves — minced
2 tablespoons of finely chopped red bell pepper
1/2 a serrano pepper — finely chopped (optional)
1 teaspoon dried oregano
1 cup yellow corn kernels (thawed if using frozen)
1 cup black beans (canned is fine, drain and rinse them)
Oil
Salt & Pepper
Avocado slices for garnishTomato and cilantro salsa for garnish (recipe below)

If the quinoa is not washed (it will tell you on the bag) — wash the quinoa under running water by rubbing it between you hands. Wash it 3 to 4 times. Drain well.

Heat some oil in a skillet and add the onion. Cook, stirring occasionally, until onion is soft and translucent. Add the garlic, bell pepper, serrano (if using) and cumin. Stir and cook for a few minutes. Add the oregano and stir.

Add the quinoa and mix well. Cook until you can hear the grains crackle a bit and they change color. Stir occasionally. Add the water and cover the pan. Reduce the heat and simmer for about 20 minutes, until the quinoa is fully cooked and all the liquid has evaporated. You will know that the quinoa is cooked when it has a small translucent ring around it.

Season with salt and pepper and mix well. Serve topped with the tomato salsa and some avocado slices.

FOR THE SALSA:
1 large very ripe tomato or 2 medium or 6 small ones (doesn’t really matter)
2 tablespoons chopped cilantro
1 large lime
Salt

Chop the tomato. Add the cilantro and the lime juice. Add the salt and mix.
