3 Delicious 5 Minute Vegan Meals – Healthy Breakfast, Lunch + Dinner Recipes

Three delicious five minute vegan meals with healthy, oil-free vegan breakfast, lunch, and dinner recipes. Chocolate Oats, a quick all green lunch, and loaded spaghetti squash for dinner. Full recipes + more info below!

Veggie Stew recipe:

Vegan Chocolate Oats

old fashioned oats
filtered water
cardamom or cinnamon
ground flax seeds
cacao powder
Trader Joe’s Super Seed + Ancient Grain Blend

I just barely cover the oats with water, add the cardamom and microwave for 4 minutes. Then stir in 2 heaping tsp ground flax and 1 heaping tsp cacao powder and stir.

NOTE: If you’ve ever had cacao powder in your oats, you;re probably going to want to add a little sweeter. It’s an acquired taste but now I love it and don’t need much sweetness at all. If you want it sweetened, here’s the time to add mashed banana, maple syrup, or whatever sweetener you like 🙂

Top with blueberries, raisins, superseded + grain blend, and peanut butter.

Serve with coffee and enjoy!

All Green Lunch

I used canned Dolmas and Eggplant Hummus from Trader Joe’s. Ia also recommend using Dr. Pragers frozen veggie burgers or for a hearty boost of protein, the frozen Gardein vegan burgers.

Loaded Vegan Spaghetti Squash

1/2 large spaghetti squash, roasted
1 cup veggie stew or canned vegan soup of choice
nutritional yeast

Warm soup and spaghetti squash. Just a tip, use a slotted spoon so you don’t get too much liquid. A little is good, it’s like a sauce of the spaghetti squash, but you don’t want it to be too soupy.

Then add spinach, avocado, salsa, and nutritional yeast.

I also added a bit of hummus, extra salsa, and a little hot sauce, because I always do lol

You can also add flavor and extra protein with soy chorizo sausage, vegan beef crumbles, or chopped up veggie burgers.
