Vegan Breakfast Ideas for Busy Mornings

Today I’m sharing with you 3 simple yet tasty vegan breakfast ideas – easy wraps with vegan mozzarella, my favorite smoothie at the moment and a savory tofu cake.

#1 Salted Date Caramel Smoothie

6-8 soft dates (soaked in water overnight if needed)
1-2 bananas, frozen
¼ cup coconut milk
1 cup non dairy milk, vanilla if you want
a pinch of salt

→ yields 1 smoothie

#2 Savory Tofu, Bean & Tomato Cake

2 cups spelt flour (240g)
2 tsp baking powder
1 tsp garlic powder
1 ⅓ tsp salt
½ tsp black pepper
1 tsp dried herbs

⅓ cup vegan butter, melted (80ml)
1 cup + 3 tbsp non dairy milk (250ml + 3 tbsp)
juice of ½ lemon
¼ cup nutritional yeast (10g)
3 tbsp sunflower seeds
2 handfuls of cherry tomatoes, cut in half
½ cup beans (120g)
1 onion, diced
200g smoked tofu, cut into cubes (7 oz)

→ yields 9-12 pieces

#3 Tofurella Wraps

For the tofu:

1 block tofu, firm, plain (200g)
1 tsp garlic powder
1 tsp dried italian herbs
2 tbsp white wine vinegar
1 ½ tbsp olive oil
2 tsp balsamic glaze
1 tsp agave
salt to taste, I added ¾ tsp
pepper to taste

→ this makes enough tofurella for 4 wraps

For the wraps:

sunflower seeds
fresh basil
tomato, cut into slices
hummus pesto sauce: 1 tbsp hummus, 1 tbsp lemon juice, 1 tsp vegan pesto

more ideas: avocado, chickpeas, pickles, lettuce, olives etc
