A Week of Vegan Breakfasts during Online School

Hi and welcome back to another one of those what i eat in a week videos; today: breakfast edition. All of these recipes are super easy to make, good tasting and vegan of course: a quick polenta porridge, my new go to smoothie bowl, lentil hummus toasts and more!

#1 Lentil Hummus Toasts

4-5 tbsp cooked red or yellow lentils
(I cooked up ½ cup (100g) of dry lentils but only used a small amount for the toasts)
plain hummus
a squeeze of fresh lemon juice
sliced cucumber
hot sauce
fresh herbs
whole wheat toast

#2 My New Go To Smoothie Bowl

~1 cup frozen blueberries (~120g)
1-2 bananas, frozen
1 tbsp peanut butter
1 tsp maca powder
1 tsp flax seeds, semi ground
¼ cup orange juice (60ml), more if you don’t have a speedy blender
a few more tbsp of liquid to adjust the consistency while blending (i used oatmilk)

#3 Lentil and Quinoa Breakfast Wrap

⅓ cup yellow lentils, uncooked (67g)
½ cup quinoa, uncooked (85g)
1 ⅔ cup vegetable broth, more if needed (410ml)

*serves 1

4 tortillas
1-2 avocados
lemon juice
fresh spinach or other green
marinara or pizza sauce
hot sauce
pickled onions would be super nice here (recipe:
optional: vegan cheese, or nutritional yeast

*enough for 4 wraps

#4 Go To Polenta Porridge

a handful of dates, chopped
⅓ cup polenta (55g)
¼ tsp salt
¼ tsp cinnamon
½ tsp vanilla
1 cup non dairy milk (250ml), more if needed

topping ideas: frozen berries, walnuts, extra milk, dessicated coconut maybe

*serves 1
